6 Slices bacon or 1/3 cup leftover bacon pieces

 3 Tbsp all-purpose flour

6 cups less sodium chicken broth

4 cups peeled, chopped Yukon Gold potatoes

4 cups peeled, chopped sweet potatoes

1 tsp crushed rosemary

2 cups whole milk

10-oz spinach

Instructions

1. Cook bacon (if needed) in a large Dutch oven over medium heat until crisp; drain on paper towels

reserving 2 Tbsp drippings in the pot or use butter if preferred.

2. Cook onion, celery, and garlic in hot drippings over medium heat until tender.

3. Add flour; cook, stirring, for 2 minutes.

4. Gradually stir in broth.

5. Add potatoes and rosemary. Bring to a boil, then reduce the heat. Simmer for 15 minutes or until the potatoes are tender.

6. Stir in milk, and continue to cook for another 5 minutes.

7. Gradually add spinach, stirring until wilted. Top servings with bacon.
